Falafel Winter Salad Bowl

If you are on a plant-based diet, you're on a never ending quest for creative and exciting dinner options. This homemade falafel salad is not only plant-based and gluten free, but it uses seasonal and fresh vegetables. Spice up your dinner with this easy and delicious recipe!

 

Prep Time: 15 mins

Cook Time: 1 hr

Yield: 4 bowls

 

INGREDIENTS for Roasted Veggies:

-5-7 carrots

-1 head cauliflower

-1 butternut squash

-1 head red cabbage

-2 tbsp cumin

-Salt and pepper to taste

 

INGREDIENTS for Falafel:

-2 cups cooked lentils

-1 huge handful of cilantro leaves (and stems)

-1 huge handful of parsley leaves (and stems)

-1 1/2 tbsp olive oil

-1/2 squeezed lemon

-1-2 garlic cloves

-1 tsp salt

-1-2 tbsp gluten free flour (I use almond flower)

 

INGREDIENTS for Bowls:

-2-3 cups of spinach OR kale

-1/4 cup crushed pistachios

-Tahini, lemon juice, honey and olive oil (mix and drizzle for dressing)

 

INSTRUCTIONS: ROASTED VEGGIES

-Preheat oven to 400 degrees

-Peel carrots and cut them into thin strips. Thinly coat in olive oil and place them on a roasting pan

-Cut cauliflower into florets and place on a separate roasting pan (drizzle with olive oil and sprinkle cumin, salt and pepper)

-Cut cabbage into wedges, drizzle with olive oil, salt and pepper, and place on separate baking sheet

-Cut butternut squash into cubes (and peel skin). Place onto baking sheet and drizzle with olive oil

-Bake separately. Roughly 20-40 minutes - stirring occasionally

-Let cool for 10 mins when finished

 

INSTRUCTIONS: FALAFEL

-Preheat oven to 350 degrees

-Pulse all ingredients except flour in a food processor or blender

-Take mixture out and stir in flour

-Make sure mixture is dry enough to handle

-Make 9-10 balls with mixture

-Heat olive oil on skillet

-Once oil is hot, place balls on skillet and brown. Once one side is brown, flip the falafel. Do this several times, until all sides are browned (roughly 2-3 mins per side)

-Place browned falafel on baking sheet and put into oven. Cook for 15 mins.

-Take out and let cool.

 

INSTRUCTIONS: BOWL ASSEMBLY

-Assemble spinach red cabbage, falafel, carrots and roasted cauliflower in a bowl.

-Top with pistachios and drizzle dressing as needed.

-ENJOY!!!!!
